Freeze the menu, equipment and service flow first. Late equipment changes affect electrical loads, counters, ventilation and storage, and can delay a unit that is already in manufacture.
Plan before manufacture
Survey crane access, delivery times and foundation levels before the unit leaves the factory. Coastal destinations often have controlled working hours and busy internal roads during the season.
Make the decision clearer
Designing the café for disassembly also helps after summer. The same unit can be stored, moved or installed at another destination instead of becoming a one-season expense.
